Avocado Basil Pesto
Ingredients
· 1 avocado
· 2 cups basil
· 2-3 cloves garlic
· 1 jalapeno (optional)
Directions
1. Pour around 1/2 cup of water into your blender along with the rest of the ingredients and blend until smooth.
2. Enjoy with pasta, toast, pizza, anywhere you'd generally use traditional pesto!
Avocado Chocolate Mousse
Ingredients
· 1 avocado
· 1/4 cup coconut water
· 1/2 teaspoon instant coffee granules
· 2 tablespoons maple syrup or agave
· 2 tablespoons cacao powder
· 1 teaspoon vanilla extract
· A pinch of salt
· Coconut whipped topping (optional)
Directions
1. In a mug, mix the coconut water, instant coffee granules, maple syrup, and vanilla extract.
2. Scoop out the avocado into a food processor and pour in the contents from the mug. Blend until smooth.
3. Add in the cacao powder and salt and blend until smooth, scraping down the sides as you go along.
4. Scoop out into a nice glass jar or mug and refrigerate for at least 2-3 hours or until completely firm. It will be nice and thick. Enjoy!
Mint Chocolate Chip Nice Cream
Ingredients
· 1/2 avocado
· 1 banana, cut into chunks and then frozen
· 1 teaspoon vanilla extract
· 1/4 teaspoon peppermint extract
· Pinch of salt
Directions
1. Add all the ingredients except for chocolate chips to a food processor and blend until smooth.
2. Add in the chocolate chips and pulse to combine.
3. Refrigerate for about 3 hours.
4. Take out of the fridge and let thaw until it's soft enough to scoop. Serve immediately.
